I cut up over half of each and put it in a container for my brother to take home hahaha. I don't want that sitting around in my fridge! Yes, I am a mean wife and mother but my daughter and husband will understand....for now. I promise we'll be eating a lot of good food once November 18th has come and gone ;)

Get Fit Keep Fit
Since I am working more and training hard for my first figure competition it takes careful planning to make sure I eat and train right. Every week I chop 2 big boneless, skinless chicken breasts into small cubes and divide them into 4oz weight and then keep them in baggies and throw them in a storage bowl. Then I cook a whole bunch whole wheat spaghetini and brown basmati rice and put them in storage containers and keep them in the fridge. I'm just too lazy to chop up veggies ahead of time and it's really not as hard as doing all the prep for each meal if I prepare the carbs an chicken ahead of time. As you can tell by the photo, I am going to be cooking more rice and pasta tomorrow. Those chicken bags will be gone by the end of tomorrow too so I'll have to chop more of those on Thursday.
This is what it looks like when I put it all together. I don't mind this carbless meal..for a carbless meal. I've had much worse!

Cindy's Protein Crepe/Pancake
Ingredients:
1/4 cup slow cooked oats raw
1/4 cup light cottage cheese
5 egg whites
cinnamon to taste
Put all ingredients in a blender and blend about 15 seconds. Heat skillet and put half of your batter on the pan. Watch your heat! Too high can really destroy it. My skillet is usually about 325-350 degrees. Don't forget to flip your crepe!
Topping Ideas:
1/2 cup frozen strawberries thawed to a warm soft texture. Sweeten w/ splenda and put 1/2 on top of each pancake.
St. Dalfour's Strawberry jam (it's the closest to natural and all right for those not on a pre-comp diet)
Cinnamon and Splenda
ED Smith No Sugar Added regular syrup (for those not on a pre-comp diet)
Any other type of frozen fruit thawed like strawberries.
Pancake Flavouring Ideas:
Vanilla extract
Sugar Free Syrups (I mix sugar free chocolate in mine). Hazelnut, Chocolate, Fruit Flavoured.
ENJOY! :) This recipe has been tested on kids aged 8 and 12, 13 and they all love it! Just don't tell them cottage cheese is in it. Actually, don't tell them what's in it at all. They'll like it :)
